Wild Fermented Malt Vinegar

This is my first batch of wild fermented malt vinegar. After taking about 4 weeks to harvest a mother, and then another 4-6 weeks turning the beer into vinegar it was finally ready to taste. Normally it’s aged and then diluted with water before it’s final use. I took a little taste before aging. Well, maybe not a little. I drank a full tablespoon. DON’T EVER DO THAT!!! My eyes started watering, my sinuses were on fire. Seriously, such a bad idea. Note to self – tiny sips… tiny sips…
